I baked a Nihon Jin Cheesi Cake!

Today's objective is to bake a Nihon Jin Cheesi Cake! Japanese Soft Cheese cake!
I hope to be able to achieve close to the standard of Breadtalk or the Japanese Cheese Cake band in Singapore (the one with the cow logo on the cake!).
It's super soft and light and yummy! So I searched the recipe online and decided to try!
The ingredients look simple enough, but the technic is rather complex...
Quite a handful to whip egg whites to become "soft white peaks!" whatever does that mean?!
1st try; no "soft white peaks" formed leh?! I beat for more than 10 mins on the electric mixer liao?! Gooosh... so I wasted 3 good egg whites (of cos the 3 extra yolks cos cant use for anything anyway)!
2nd try: Decided to change a bigger bowl (suspect it's the lack of air intake when beating). not abt to take another chance, I used the manual method to hand beat with a whisk! Viola! Soft white peaks after 8 damn shagged minutes of non stop beating!! So Desu Ka!
Then fold in the 1st mix and quickly pop into the oven with a "water bathe method".... supposed to fill the tray to at least half the level of the baking tin.... abit like steaming except in the oven!

Then the funny thing was that the baking tin was floating around in the oven cos the mixture was so light!!! Wuahahah!

Then when baking, it turned alittle too brown on the top, I read that the trick is to cover the top with an aluminum foil! This way, the cake would get "sunburnt" like my Lemon Cake!!!!

Well, though it was a little too moist and wet inside (which I suspect that the "white peaks" are too soft! Could be too much milk too.... The cake kinda sinked back down after I took it out from the oven, I think this is quite normal...
Overall, I give the looks 7.5 /10, taste 8 /10, texture 5/10...
Must improve the next time! YAY!
Overall, this proved to be quite a challenging recipe for some1 so new to baking like me!
Good try though, rather satisfied with the results!
Hmmm..... must try 1 more time then I will give to my friends...
after this.. what next?!
